Vegan Thanksgiving Recipes | Pumpkin Pie | Stuffing | Zero Waste

What better way to tell your friends and family that you appreciate them than with a delicious thanksgiving meal. In this video, I share my vegan pumpkin pie recipe and stuffing recipe.

//Pumpkin Pie Recipe
(adapted from

1¼ cup all purpose flour
6 Tbsp cold vegan butter or coconut oil
¼ tsp salt
4 Tbsp ice cold water

//Pie Filling
11/2 Cups Pureed Pumpkin
1/2 Cup Full Fat Coconut Milk
½ Cup Brown Sugar
¼ Cup Cornstarch
1/2 -1 cup of almond milk
1 Teaspoon Vanilla Extract
2 Teaspoons Pumpkin Pie Spice
½ Teaspoon Salt
360 F for 60 minutes

1 pound good-quality day-old, torn into 1″ pieces (about 10 cups)
1 1/2 cups chopped yellow onions
2 1/2 cups of diced mushrooms
1 1/2 cups 1/4″ slices celery
1/2 cup chopped flat-leaf parsley
1 tablespoons sage
1 tablespoon rosemary
1 tablespoon chopped fresh thyme
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 1/2 cups vegetable stock
In oven for 30-40 minutes at 350
