Margarita cupcake recipe | Cupcake Jemma

Hi gang! This week’s recipe features deliciously zesty, limey, boozy Margarita Cupcakes! You can use any tequila you like (or leave it out altogether if you’re baking for kids) and I like to finish mine just before eating with a sprinkle of salt and a delicious simple lime syrup.

RECIPE
Cupcakes:
135g unsalted butter
125g SR flour
125g caster sugar
1/4 tsp bicarb soda
zest of 2 limes
1tbsp lime juice
2 large eggs
1/2 tbsp milk

Icing:
200g unsalted butter
450g sifted icing sugar
4 tbsp tequila

Syrup:
4 tbsp lime juice
65g caster sugar

(plus cut lime peel and sea salt, for decorating)
