Breakfast SAUSAGE PATTIES Recipe from Chicken breast or Thighs

This is a healthy breakfast sausage patty recipe that you can make from scratch! You can add what ever spice you want. Mine are to make a basic sage sausage patty. It tastes pretty darn good! (Open for instructions)

For this recipe, you can use already ground chicken or turkey. The fat content makes a difference. The less fat, the drier the patty. A combination of dark and light meat is the best, but if you want to go nearly fat free with this recipe, use skinless chicken breast. If you would like a very juicy patty, use only skinless, boneless chicken thighs.

I LOVE a simple spicy sausage so I add more cayenne pepper to mine as they are cooking. I also add quite a bit of 100% pure stevia to the mix so that it is sweet. This will replicate the maple syrup flavor that I LOVE with breakfast sausage, but can’t have because of the high sugar content.

Here is the basic recipe for the patties.

Per 1 pound of meat (turkey, chicken, or even pork if you like)
add:
1 1/2 tablespoons of ground Sage
1 teaspoon of Cayenne pepper
2-3 stevia scoops – more to make it sweet! (Yum)
Salt and Pepper to taste as they are cooking – I sprinkle with a little more cayenne for hotness!

Spread out a tablespoon of the meat mixture onto a well oiled frying pan. Let sit until the edges turn white and it gets nice and crisp. Flip, and wait a minute or two until the other side is nice and cooked.

Below is a list of spices that you can add to suit your taste:
Fennel
Ginger
Red Pepper Flakes
Garlic
Onion powder
Anything else to suit your fancy!

These can be frozen into patties either raw or cooked, and used as needed.

This can be eaten on the Atkins diet, Paleo Diet, Weight Watchers, and any other low carb or low calorie diet meal plan. I eat these for lunch as well as for breakfast sometimes.
