Hi everyone! Thanks so much for following me on my weight loss journey! This week I lost 2.2lbs. That means I’ve lost 54.2 lbs in total since joining WeightWatchers on 02/02/2017!

This weeks meal prep recipe comes out of the WeightWatchers One Pot Meals cookbook from 2015. As mentioned I decided to make the Mediterranean Chicken Casserole. I did not follow directions because I didn’t read the recipe 100% so I purchased more chicken than needed. I did follow everything else correctly except I subbed coconut sugar for brown sugar and used Kalamata olives. If you were to follow the recipe to the T this would be it.
Mediterranean Chicken Casserole
Serves 8, 7 SP per serving
8 (1/4 lb) skinless chicken thighs
1 (14oz can) quartered artichoke hearts, drained
3/4 cup chopped pitted dates
12 pimento-stuffed green olives, halved (I used Mezzetta brand sliced Kalamata olives)
2 T light brown sugar
2 T balsamic vinegar
3 garlic cloves
1 T capers, drained (I also used the same brand, Mezzetta)
1 teaspoon olive oil
2 teaspoons of dried oregano
1/2 teaspoon of salt
1/4 teaspoon black pepper
1/2 cup of reduced sodium chicken broth
Combine chicken, artichokes, dates, raisins, olives, brown sugar, vinegar, capers, oil, oregano, salt,and pepper in a large gallon sized zip close plastic baggie. Squeeze out all the air and seal the bag. Turn to coat chicken. (More like massage it all in to get everything coated. Simply turning it ain’t gonna do nothing!) Refrigerate, turning occasionally for at least 8 hours or up to overnight.
Preheat oven to 350F
Remove the chicken and arrange in a single layer in a shallow baking dish. Dump the marinade over the chicken. Add the broth on top. Bake until chicken is cooked through. 35-45 minutes.
I’m pairing this with a 1/2 cup of brown rice for an additional 4 SP. With my screw up which ended up being 11 SP and rice my lunch meal prep will be 15 SP. That’s fine for right now because I’m allotted 59 SP for the time being!!
