Nov 20 2016 What I ate on WW Cook Chili and Beef barley soup with me

This is a Cook with me and a What I ate all rolled into one.
Beef Barley Soup and Easy Chili (these are NOT low sodium) but they are low in smart points. For those of you who are watching your sodium you can lessen the sodium by using low sodium ingredients.

Beef Barley Soup:
6 cups of beef broth
8 – 10 oz of beef roast (cut up on 1 inch pieces)
10 oz of potatoes (diced)
3 large carrots (chopped)
3 stalks of celery ( diced)
1/2 onion (diced)
2 tsp minced garlic
1 tsp pepper
few dashes of hot sauce
1 TBS Worcestershire sauce
1/2 jar of tomato paste (3.5 oz)
1 tsp of Better than bullion beef paste
1/4 cup long cook barley (if using short cook time barley add accordingly)
Put beef and onion in a large pan, brown beef for 4 min, add garlic, stir 1 min. add all ingredients except potato. Cover and simmer for 2 hours. Add potato and simmer for one more hour. You can add more beef broth if you need to.
When making this in a slow cooker, use red potato and add all ingredients to slow cooker, cook on low for 8 hours or high for 4-5 hours.
1 onion (diced)
1 TBS minced garlic
3 stalks of celery (diced)
1 bell pepper (any color (diced))
1 lb of ground chicken (can use beef but pts are higher)
1 Qt of tomato juice
29 oz can of tomato puree
2 cans (15 oz) of beans (three mix beans are the best but you can use any)
3 TBS chili powder
1 1/2 tsp Cumin
1 tsp salt
2 tsp paprika
1/2 cup elbow noodles (optional)

Brown chicken in large pot with onion and garlic add 1 tsp paprika, 1 tsp of cumin and a little salt pepper (this is in addition to the recipe) to flavor the meat. When this is browned you can add all the other ingredients and let this simmer on low for 2 hours (stirring every 30 min) add noodles and let simmer another 30 min or until veggies and noodles are soft. We eat this with crackers

Beef Barley Soup = 4 (1 1/4 cup serving size)
Chili = 6 (1 1/4 cup serving size)
