Butternut squash is zero SmartPoints and I love it. There are so many things you can do, and this cheesy-stuffed butternut squash Weight Watchers recipe is one of my go-tos when I want something easy to make.
It can be quick, but it takes 45 minutes to soften the squash in the oven. Maybe you can do it in the microwave, but I’ve never tried that.
My recipe was made with full-fat hard cheese and light Philadelphia and a slice of Warburton bread, so comes to 16sp in total. It serves two, so 8sp for the whole meal. Serve with salad and you have a low-pointed dinner and it can be made lower by switching to half-fat cheese.
By the way, my husband loves to have fun and is very rarely serious, so there’s a little extra at the end for some entertainment.
