I love them and I’m sure you guys do too, so I wanted to share a really special burger recipe with you today. My avocado burger is creamy on the inside, crunchy on the outside and is wrapped up in a delicious toasted bun with a homemade pineapple salsa. It’s great if you’re vegetarian or gluten free (using gluten free buns), or if you love meat but fancy a change or a lighter option.

This recipe uses creamy avocados, garlic, onions and plenty of Peruvian superfoods. Peruvian Avocados are wonderful in a burger as they add that gorgeous creamy texture that you want a burger to have, but you know that you’re eating something that’s packed with vitamins and minerals. This is unlike any burger you’ve ever had. Who said burgers can’t be healthy?

The Recipe (1 portion):

Quarter ripe mashed avocado
60g cooked white quinoa (boiled for 12 mins and drained)
20g finely chopped red onion
3g of maca powder (optional)
3g white chia seeds (optional)
1 mashed garlic clove
Pinch of salt
15g quinoa flour
1/2 of a beaten egg
Seeded bun
Pineapple Salsa:
1 slice of ripe pineapple
1/5 red onion
2 sprigs of coriander
salt and black pepper to season

Chilli & Tomato Chutney:
2 red chillies
half small tomato
1/4 white onion
2 tablespoons of honey
2 tablespoons of vinegar
1/4 teaspoon white pepper
pinch of salt

6 spinach leaves
2 tablespoons of Greek yoghurt

Optional Toppings:
– 1 fried egg
– 1 slice of beef tomato
