Mini Chili Meatloaf Recipe – Gluten Free

These Mini Chili Meatloaves are far more nutritious than traditional meatloaf since I’ve replaced half the meat with smashed red kidney beans which are loaded with fiber and vitamins. These are the best way to get dinner onto the table quickly since their small size has them cooked in half the time of a traditional meatloaf. Each comes packed with the flavor of a bowl of chili making this recipe one you’ll turn to again and again.

Ingredients for the Meatloaf
• 12 ounces ground beef
• 1 can red kidney beans
• ½ cup gluten free bread crumbs
• 1 egg
• ½ cup salsa
• 1 tablespoon chili powder
• 1 teaspoon salt

Ingredients for the Glaze:
• 2 tablespoons ketchup
• 1 tablespoon brown sugar
• 1 teaspoon chili powder
