My New Meatloaf Recipe Using Thrive Life Ingredients

Ingredients:

2 lbs. ground beef
1-1/2 C. Thrive Life Freeze-Dried Chopped Onion
1-1/2 C. Thrive Life Freeze-Dried Red Bell Pepper
1 Tbsp. chopped garlic
1-1/2 C. Italian-style bread crumbs
1 egg
1-1/2 tsp. salt
1-1/2 tsp. Thrive Life Chef’s Choice All-Purpose Seasoning
1-1/2 tsp. Thrive Life Peppercorn Blend
1/2 C. Thrive Life Classic Tomato Sauce (dry)
2 C. cold water (for the tomato sauce)
2-3 Tbsp. sour cream

Instructions:

Cover the peppers & onions in 1/4 to 1/2 C. water – just enough to soften and partially rehydrate, approximately 10-15 minutes. They will continue to cook and be delicious in the meatloaf.

In a medium bowl, whisk water with the tomato sauce until thoroughly combined; set aside. It will not thicken until you heat it on the stove later.

Melt 2 Tbsp. butter in a medium saute’ pan; saute’ the vegetables & garlic for 2-3 minutes or until lightly “toasted.” Be careful to not allow burning. Remove from heat & set aside for a few minutes.

Add to the ground beef: the egg (lightly beaten), sour cream, seasonings, bread crumbs, saute’d vegetables, and then *no more than one-half* of the tomato sauce. Mix until just combined. Put into a 5×9″ loaf pan.

Bake at 350 degrees for 40 minutes.

While loaf is baking, heat remaining sauce in a small sauce pan, whisking until thickened. Top loaf with some of the sauce.

Increase oven temp to 400; bake for an additional 20 minutes. Remove from oven & rest for 30 minutes. Check for internal temperature of 160 degrees.

Serve with your favorite vegetable and/or side salad.
