Italian Tomato and Lentil Soup – Easy Dinner Recipe

A lot of you have been asking for the recipe of this Italian tomato and lentil soup since I posted a picture of it on Instagram a few times. It’s super easy to make, it’s full of nutrients, and it’s absolutely delicious, so it’s a weekly staple at my home.

Here’s what you’ll need for the soup:
♥ 1 large onion
♥ half a small chorizo (or bacon, smoked ham or sausage)
♥ 3 tbsp olive oil
♥ 2 medium carrots
♥ 2 celery stalks
♥ 2 bay leaves
♥ dried rosemary
♥ 500g of fresh tomatoes (around a pound) or a 400g can of chopped tomatoes
♥ 1.7l (just under 2 quarts) of vegetable broth, chicken broth or water
♥ salt and pepper
