RECIPES:

[1] MUMMIFIED JALAPENO POPPERS (baked)

Ingredients
– 6-8 Jalapeno peppers, cut in half with seeds scooped out
– 8 oz. (250g/1-1/4 cups) package of cream cheese, softened
– 1/4 cup (15g) cilantro, chopped
– 1/4 cup (25g) green onion, chopped
– 1/4 tsp (1.25g) garlic powder
– 1/4 tsp (1.25g) onion powder
– 1/4 tsp (1.25g) salt
– 1/3 cup (42g) cheddar cheese, grated
– 1 package of frozen pastry dough (or homemade)
– sliced olives (for eyes)

1. Preheat oven to 425 degrees Fahrenheit.
2. Line baking sheet with parchment paper.
3. Cut Jalapeno peppers and scoop out membranes and seeds.
4. In a bowl, beat cream cheese, cilantro, green onions, garlic powder, onion powder and salt.
5. Stuff the peppers with cream cheese mixture.
6. Sprinkle cheese on top.
7. Spread out the pastry dough and cut into thin slices (about 1/2 inch).
8. Wrap dough around the stuffed peppers (like a mummy!)
9. Place olives as eyes.
10. Bake for 10-12 minutes and serve.

[2] PUMPKIN-SHAPED CHEESEBALL BITES

Ingredients:
– 8 oz. (250g/1-1/4 cups) package of cream cheese, softened
– 1 cup (125g) cheddar cheese, grated
– 1 tsp (5g) garlic powder
– 1 tsp (5g) paprika
– 1/2 tsp (2.5g) salt
– 1/2 tsp (2.5g) black pepper
– 1/3 cup (16g) chives, chopped
– 1/3 cup (42g) pecans, crushed
– 2/3 cup (36g) cheddar flavoured goldfish crackers, crushed
– 16-18 pretzel sticks

1. In a bowl, beat the cream cheese, cheddar, garlic powder, paprika, salt and pepper together until well blended.
2. Use a cookie scoop to form into balls and place onto parchment-lined baking sheet. (Forms about 16-18 balls)
3. Refrigerate for about 30 minutes.
4. In a small bowl, combine crushed pecans, crushed goldfish crackers and chopped chives.
5. Roll each ball into the crumb mixture until they’re well coated.
6. Insert a pretzel stick into each ball
Serve right away or loosely cover with plastic wrap and return to fridge.

[3] BONE SHAPED BREADSTICKS WITH MARINARA SAUCE

BREADSTICKS
Ingredients:
– 1 1/4 cups (312ml) warm water
– 1 tbsp (15ml) olive oil
– 1 tbsp (15ml) honey or sugar
– 2 tsp (10g) instant dry yeast
– 2 1/2 cups (390g whole wheat flour
– 1 tsp (5g) salt

– 3 tbsp (45g) butter, melted
– 1/2 tsp (2.5g) garlic powder
– 1/4 tsp (1.2g) Italian seasoning
– grated cheeses (parmesan, cheddar, mozzarella) or any cheese you like.

1. In a small bowl, combine water, oil, honey and yeast. Mix well and set aside.
2. In a larger bowl, combine flour and salt. Add the yeast mixture and mix well either by hand or by using a stand mixer.
3. Knead on a floured surface until you get a smooth ball. Place in a clean and lightly oiled bowl.
4. Cover and let rise in a warm place for about 1-2 hours.
5. Preheat oven to 400 degrees Fahrenheit.
6. Divide the dough into about 16 equal pieces.
7. Roll each piece into a 5-7 inch log. Cut both ends and form into the shape of a bone.
8. Place onto a parchment-lined baking sheet and bake for 10 minutes.
9. While baking, combine melted butter with garlic powder and Italian seasoning.
10. Brush garlic butter mixture onto baked breadsticks.
11. Sprinkle with cheese and bake for another 5 to 7 minutes.
Serve with marinara sauce.

MARINARA SAUCE:
Ingredients:
– 4 cups (900g) crushed tomatoes (canned/fresh)
– 2 tbsp (30ml) olive oil
– 2 tbsp (6 cloves) minced garlic
– 1 tsp (0.8g) thyme, ground or fresh
– 1 tsp (5g) salt
– 1/2 tsp (2.5g) red chili flakes

1. In a saucepan, heat olive oil under medium heat.
2. Add garlic and saute for 2-3 minutes.
3. Add tomatoes, thyme, salt and red chili flakes. Stir to combine.
4. Bring to boil then simmer and cover for 15 minutes while stirring occasionally.
5. Once desired consistency is reached remove from heat and serve.
