Coca-Cola Cake with Broiled Peanut Frosting consists of a moist chocolate sheet cake topped with a wonderfully sweet and salty peanut butter icing. Sprinkled with chopped peanuts, the icing is broiled to caramelize the sugar on top and really bring out the flavor.
This combo of chocolate and peanut butter is one of the best!
The south’s favorite soft drink makes for wonderfully delicious cakes. The soda gives the cake an extra fluffy rise and tender, moist texture. You won’t really taste the coke in the cake, but it is an integral part of the cake.
Mini marshmallows are added to the batter and they, along with the chocolate flavor and the texture of the cake, make it reminiscent of Texas Sheet Cake or Mississippi Mud Cake.
The cake batter is light tender and moist, but the real winner here is the broiled peanut butter frosting. The salty/sweet flavor is to die for. It makes you keep wanting to go back for one more bite.
Since the frosting is so rich, this snack cake can be cut in small pieces and it is great for a crowd.
Tips for making Coca-Cola Cake with Broiled Peanut Frosting:
- Pepsi or even root beer could be used instead of Coke, but I don’t recommend using diet soda.
- It’s not necessary to broil the icing, but it does help melt and caramelize it slightly.
- If you do broil the frosting, make sure to watch it carefully. It only needs about a minute. Leave it in too long and you will ruin it.

Coca-Cola Cake with Broiled Peanut Frosting consists of a moist chocolate sheet cake topped with a wonderfully sweet and salty peanut butter icing.
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup salted butter, (melted)
- 1/4 cup unsweetened cocoa powder
- 1 cup Coke
- 1/2 cup buttermilk
- 2 large eggs, (lightly beaten)
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 1/2 cups mini marshmallows
- 6 tablespoons butter, (softened)
- 1 cup packed dark brown sugar
- 2/3 cup smooth peanut butter
- 2 tablespoons milk
- 1/2 cup chopped peanuts
Preheat oven to 350 degrees and spray a 9×13-inch baking pan with baking spray.
In a large bowl, whisk together flour and sugar.
In a medium bowl, whisk together melted butter, cocoa powder, and Coke. Pour into bowl with flour and stir until mixed well.
Add buttermilk, eggs, baking soda, and vanilla and mix well.
Stir in mini marshmallows and pour into prepared pan. Bake for 35 to 40 minutes. Let cake cool for 10 minutes before frosting.
To make frosting, beat butter, brown sugar, and peanut butter with an electric mixer until blended.
Beat in the milk and then stir in the peanuts. Spread frosting on cake.
Place cake under the broiler for a minute or two, or until the frosting just starts to get browned.
Using salted butter gives the cake and frosting a nice salty flavor to contrast the sweetness. If you don’t like salty foods, try using unsalted butter.
Pepsi, Cheerwine, Dr. Pepper, or Root Beer can be used instead of Coke.
Broiling the frosting helps give it extra flavor, but this step can be skipped if you wish.
