Strawberry Smoothie

Servings: 2 (8 ounces) smoothies or 1 (16 ounces)
Ingredients
1 cup whole frozen strawberries – about 10 large/medium
ΒΌ cup nonfat plain Greek yogurt
1 tablespoon almond butter – or peanut butter or nut butter of choice
2 teaspoons honey – plus additional to taste (optional)
1 teaspoon pure vanilla extract
3/4 cup unsweetened almond milk
Instructions
Place all of the ingredients in a high-powered blender: strawberries, yogurt, almond butter, honey, vanilla, and almond milk.
Blend until smooth. Enjoy immediately or place in an airtight jar (the less air, the better) and refrigerate for up to 1 day.
Notes
To make vegan/dairy-free: use a non-dairy yogurt and maple syrup instead of honey. Or, leave the yogurt out and replace it with a few slices of banana for creaminess.
If you do not have a high-powered blender, I recommend blending the strawberries a few at a time. Using sliced strawberries instead of a whole will help. You also may need to add more almond milk and stop and stir the blender periodically to help the smoothie combine.
Store in an airtight jar in the refrigerator (the less air, then better!) for up to 1 day. Stir or shake the jar to recombine, then enjoy.
